For me, travel always calls for meal prep - it's a lot easier to relax when you're not thinking about making dinner! The best recipe I have for this is my pulled pork. It's good year-round, including these hot summer months, and you can use it to make just about everything. Tacos, pizza, burritos, rice bowls, lettuce wraps, sandwiches... you name it. I'm constantly finding new ways to serve this dish.
